Chapman University in collaboration with the California Dairy Innovation Center is excited to offer two short courses in January 2023.
1. Coffee, Tea, and Creamers: The Science and Art of Milk in Beverages
A first of its kind short course introduces participants to the science of roasting and brewing coffee, tea, and creamers fundamentals, and creating innovative coffee and tea-based milk beverages. Experts will share the challenges and opportunities of formulating with milk and processing ready-to-drink aseptic and shelf-stable products. The course features hands-on activities and demonstrations, extensive Q&A time with formulation experts and will benefit entrepreneurs, students, and industry professionals in R&D, production, marketing, and QA in the food processing, food service and distribution sectors. No prerequisites required.
Industry $450, Academia $250, Students $75 (after December 15, add $50)

2. Better Process Control School
Chapman University offers a 2-day course in acidified and aseptically processed foods and a 3.5-day course in retorted foods for operators, supervisors, auditors, academics, and government personnel who work in R&D, QA, and production of shelf-stable heat processed foods. Participants can sign up for one, two, or all three courses and earn the respective certificates. No prerequisites required.
Industry: $900 for the 3.5-day Retort course, $600 for the 2-day Acidified or Aseptic course
Students: $450 for the 3.5-day Retort course, $300 for the 2-day Acidified or Aseptic course

These courses are offered as part of the Dairy Business Innovation Initiative Pacific Coast Coalition funded by USDA-AMS in collaboration with the CA Milk Advisory Board.
Chapman University is a mid-sized, private liberal arts-based university located in historic downtown Orange in Orange County, California, 35 miles south of Los Angeles. The Food Science program was founded in 1979 and is a nationally recognized program that educates students in the scientific understanding of food and food processes and prepares them for research and development in the food industry. The short courses will take place in the new state-of-the-art Keck Center.
