The Forum will address fundamental Food Safety Modernization Act (FSMA) requirements and provide guidance on how these requirements can be blended into existing in-plant food safety programs.
The Food Safety Modernization Act (FSMA) stands to change the landscape of the U.S. food industry. Presented by top experts, this one-and-a-half day food safety workshop will address the fundamental requirements of FSMA and provide advice on how these requirements can be blended into existing in-plant food safety programs. During this workshop, participants will learn what FDA inspectors will look for in an effective food safety plan, including hazard analysis, identification of preventive controls, specification of monitoring procedures, "parameters" or control limits, corrective actions, verification of procedures and implementation of a recall plan.
During the second half of the Forum, participants will delve deeper and gain a stronger understanding of how to identify microbial food safety hazards within a variety of food manufacturing environments and then develop effective controls to prevent food adulteration.
Pathogens such as Listeria monocytogenes, Salmonella, and pathogenic E. coli are hazards that can occur in many frozen food processing environments. Industry and academic experts will describe best practices in setting up and implementing proper systems to control these hazards.
