Improving K-12 Vegan and Vegetarian Options in Florida

Meeting the needs of vegetarian and vegans can be a challenge in K-12 food service. At Fort Walton Beach High School, The Nutrition Group’s Kitchen Manager Robin Brown rose to the challenge. Robin discussed her ideas with the Food Service Director Aneita Sutton and they were excited to help create healthy and delicious vegan & vegetarian meals.

The Nutrition Group developed various creative and forward-thinking dishes that tasted great and were an instant hit among students. Recipes included were, vegetable lasagna, black bean burgers, eggplant parmesan, chickpea curry and falafel wraps. Aneita stated that these offerings have made quiet an impact and she will be offering them to other schools within the district.
